After studying sushi in Japan and working as a fish wholesaler at the Osaka fish market, chef/owner Hiroki Fukushima came to New York City and worked at "Chikubu" for five years. There he refined his techniques and learned to prepare the subtle, focused, and flavorful food typical of high end traditional Japanese fare.
Hiroki has brought his training to New York City's Upper East Side. His restaurant exemplifies the amount of care that Hiroki and his partner/wife Yuka have for the food they love. Every detail from the moment you walk in the door to your final sip of tea has been considered and perfectly planned. A dinner here is the perfect way to escape from the bustle of the city.
Hiroki prepares authentic, traditional Japanese food, and only works with ingredients that you would find in Japan. Much of the fish displayed in the sushi case is flown in from Japan, and show his in-depth knowledge of their sourcing and preparation. Each dish is special and offers the opportunity to understand what sets Hiroki's sushi apaart from the oridinary. Do not get stuck on just the sushi. Hiroki's cooked items and daily specials are prepared with the same expertise. If you think you know what good tempura is, wait until you try the theirs.
